It all began with a huge love of food and a passion for cooking. A couple of well travelled, ambitious boys put their heads together, made plans and stumbled across a worldly location on the IJdok in Amsterdam. A piece of history suddenly came to life. In the VOC era when trade flourished in the Netherlands, various spices such as pepper, turmeric, ginger and nutmeg originating from India, China and other Asian countries all landed in the port of Amsterdam. The craving for flavours, textures, smells and colours that the boys had experienced for themselves during their wonderful travel adventures became something they wanted to share with everyone. This combined with sustainable entrepreneurship and respect for the planet has come together beautifully to form restaurant NOMAD.
Chef Denisa is a true artist in the kitchen. Not only is her improvisational talent enviable, but also the way she plates the dishes is a feast for the eyes! Her taste buds were hugely developed and stimulated by all the taste sensations she experienced abroad by eating the same food as the locals. She likes to create a beautiful mix of flavours and textures for which she only uses high quality products. She therefore sources and buys all the ingredients himself so that she knows exactly where they come from and has certainty that the products are bred, cultivated, grown and produced in a responsible way. Finally, chef Denisa is doing everything she can to prevent food waste. If that isn’t love then what is?

Menu
Chef Denisa cooks very intuitively from the French kitchen with worldly, fresh and seasonal ingredients whereby minimal waste is highly valued. It’s a surprise every time what will appear on the chef’s menu for dinner. During the 5 course menu you won’t know in advance what will be created and served. This may even vary from person to person, because chef Denisa tailors the menu to suit the needs of each guest. Of course vegan, vegetarian and other dietary requirements can be catered for which you can inform us of in advance or on site. Allow yourself to be surprised and enjoy the culinary fusion world tour!
During your culinary world tour, of course a beautiful matching wine should not be missed. Our friendly and very welcoming staff will provide the best wine advice, which will only enhance the flavour pallet. In addition they will also tell you the origins of the various flavours, textures, colours and scents that appear on the plate. So you will have a well informed start to your culinary adventure.

Of course you are also welcome in our bar. Pre or post dinner you can enjoy a very diverse range of beers, wines and cocktails accompanied by delicious snacks. Or you are welcome to simply enter the bar for just a bite and a drink.
