During his working life, Chef Dennis Huwaë was mainly in charge of kitchens above which there were 2 Michelin **. In 2016 he moved to restaurant Daalder to become chef and co-owner. His wish was to cook at star level, but without the associated solemn atmosphere and stiff service. He was looking for a place where everyone dares to step in and feels at ease. The former brown café in the Jordaan was to become a star restaurant. This year, that dream became reality after restaurant Daalder received the first Michelin star in March 2021.

Dennis: ‘It has been my dream for years to have a star restaurant that does things a little differently. A relaxed place where everyone feels welcome. We have always been that on the board, but now we are really taking the space to be that business.”

Since 2016, Dennis Huwaë has been the chef and co-owner of Daalder on Lindengracht, where star-quality food is averse to solemn fuss or stiff service. The former brown café in the Jordaan received its first Michelin star in March 2021. Yet Huwaë's ambitions are greater than the 54m2 that his restaurant there counted. In Het Sieraad, Huwaë and his team are given the meters to distinguish themselves even further. And bring people together in a dynamic setting.

‘At Daalder we want to get as many different guests as possible at the table. That's possible here.' The polished brass and marble of their home in the Jordaan are making way for neon, graphic shapes and street art at Daalder's new location. At the Postjesweg, the business is bursting with energy with a bar to enjoy a drink through the evening, the round 8-person booths where groups of friends come together, and music that also adds flavor to the evening.

The environment may be completely different; In their new home, the team serves all Daalder signatures with that same personal chat at the table, that real attention and with the relaxed but precise service. The ravioli with beetroot, the satay ayam amuse-bouche, and Daalder's iconic “stroopwafel” – they are all moving with it. "The best returns. But in a very different setting.”

Please note that the capacity can vary due to the health and safety regulations. Daalder is currently available for max 60 persons in a private room, smaller groups will be seated in the restaurant. Availability will be conditional on regulations and location.
